In 2020, Kyle and Jasmin recognized a gap in St. Maarten’s culinary scene: authentic California-style Mexican food. Determined to bring these bold flavors to the island, they took a leap of faith, trading their wedding savings for a 6×12 food truck in Simpson Bay. La Chingona Taqueria was born—a small operation with big ambitions.
Launching just as the pandemic disrupted the world wasn’t easy. Limited to operating nine months a year, the couple faced significant challenges. But their commitment to quality and authenticity kept customers
coming back. Featuring recipes passed down through Jasmin’s family, handmade soft corn tortillas, and ingredients imported straight from Mexico, their menu quickly gained a loyal following.
Favorites like the “Magic Mike” Carnita Burrito and their rich enchilada casseroles became instant hits.
In 2021, La Chingona moved to a permanent location in Cupecoy. This new space offered outdoor seating, better equipment, and the capacity to expand its offerings. The result? A dining experience that elevated both quality and variety.
From tamarind margaritas made from scratch to their annual tamale fundraiser, donating $1 per dish to charity and matching the total, Kyle and Jasmin have created a brand that stands out for its flavor and heart. With a second location on the horizon, La Chingona Taqueria proves that passion, hard work, and a dash of spice can lead to something extraordinary.
