Recently arrived in Saint Martin, Emma and Lucas instantly fell in love with this vintage Renault Estafette. They decided to embark on creating their business—a journey they wholeheartedly embrace!

Lucas, a lifelong chef, will delight you with his refined and indulgent cuisine, with fresh fish as the main element prepared in various forms, cooking styles, and cuts. While Emma, serving at the bar, will greet you with her warm smile and provide you with the best recommendations.
Both passionate about well-crafted food and the vibrant atmosphere that food trucks create, they aimed to develop an innovative concept inspired by travels and experiences.

Together they prove that street food can be synonymous with quality, far removed from the notion of “fast food.”

Memento Food Truck embodies everything you seek in a restaurant:

A Menu Full of Surprises

Lucas honed his skills in Spain, immersing himself in the culture of tapas. During a journey to South America, he fell in love with Peruvian cuisine, especially the iconic ceviche. In Nicaragua, they discovered “Frijoles molidos,” which inspired their red bean hummus recipe. And, of course, they incorporate French classics, reinterpreting the iconic Croque-Monsieur with influences from various international cuisines.

The menu is displayed on a chalkboard, featuring regular new additions, ensuring there’s always something new to try! You’ll find four main categories:

Fresh Fish: The unbeatable best-seller, ceviche, made with the original Peruvian leche de tigre, along with tartares, tiraditos, and carpaccio.
Street Food Style Fish: Enjoy tacos, burgers, and much more.
Tapas: Small portions to share, including croquetas, patatas bravas, guacamole, and hummus.
Croqs: Reimagined croque-monsieurs, made with country bread from one of the best bakeries in Saint Martin!

As you might have guessed, the main element of Memento’s cuisine is fish, prepared in various forms, cooking styles, and cuts: tartare, carpaccio, raw, medium-rare, fried… There’s something for everyone! The offerings vary according to the catch of the day, featuring only local fish such as tuna, wahoo, and mahi-mahi.
